We collaborate exclusively with top purveyors who share our dedication to ensuring that our beef, chicken, pork, and fresh fish consistently meet the highest standards. This rigorous approach guarantees that each cut of meat upholds our stringent requirements for quality and consistency.

Our beef is sourced from Buckhead Pride, recognized for its aged and rigorously quality-controlled selections. We use USDA PRIME, Certified Angus Beef. Each beef loin is carefully wet-aged to maximize tenderness and juiciness and stored at ideal cold temperatures until ordered. All our steaks are expertly hand-cut, the steak is seasoned per guest specifications and brought to room temperature using our proprietary technique that maintains freshness, prevents premature cooking, and retains both flavor and moisture. Once properly tempered, the steak is grilled over an open flame to enhance its flavor profile. Following grilling, the steak is rested to allow for even redistribution of juices throughout the meat.

Our pork is supplied by BUTCHER BLOCK PRIME, an esteemed provider noted for specialty pork and uniformly high standards. Each cut is meticulously trimmed and prepared, resulting in superior flavor and tenderness across all pork dishes.

Our chicken is sourced as Gourmet Trimmed Halal breast, reflecting our dedication to both quality and inclusivity. Each portion is prepared with exceptional attention to detail in order to meet the highest standards, providing a wholesome and satisfying option for all guests. Halal gourmet chicken breast denotes boneless, skinless chicken breast produced in accordance with Islamic law (Halal), which mandates humane treatment, slaughter by a Muslim invoking Allah's name, thorough blood drainage, and prohibits the use of antibiotics or hormones. This process ensures a premium, ethically sourced protein selection.

Our fresh fish is procured through select suppliers via Sysco’s Newport Pride Central Seafood, contingent on availability. We purchase the entire whole filets of wild caught grouper and salmon, delivered fresh every Tuesday and Thursday, which are then hand-cut onsite. The fish is guaranteed never to have been frozen and arrives with assured freshness and premium quality.
